Avanti Italian-American Ristorante at Sunway Resort Hotel & Spa presents the scintillating sweet and luscious sea-water scallops from 22 to 31 January 2009. Sous Chef Shan Songappen will whip out the succulently fresh shellfish in six (6) exquisite styles that will guarantee to satisfy the palate of seafood lovers.
For those who like variety, they can dig into the appetiser Trio of Scallop which comprises a delectable combination of pan seared scallop, tartar-style raw scallop cubes and thinly sliced carpaccio-style scallop. Alternatively, try the Gratinated Scallop on a bed of julienne vegetables and crunchy pickled watermelon in a pool of aromatic Hollandaise sauce.
Do not miss out on Chef Shan’s Scallop Mille-Feuille where the shellfish is drenched in rich, French-style creamy sauce of hot butter and shallot, complemented by vegetable pearls and asparagus at the side and encased in a fluffy puff pastry. Seafood pasta lovers, fret not, for Scallop Ravioli presents an ideal choice. This smooth homemade pasta is drizzled with generous bits of scallops and given a finishing touch of fragrant chilli and basil pesto for a zesty taste.
Those who like something simple and light will do well to choose the Baked Scallop, a crispy phyllo pastry with the delectable filling of scallop, mushroom duzelles and vanilla lemon sauce. Lastly, enjoy the sixth preparation style in the form of the Scallop Skewer, where the scallops are grilled together with cubed zucchini and braised fennel before topping it off with foamy horseradish sabayon sauce. With these six treasures to choose from, it can be hard to make up your mind – you just may end up choosing them all!
